There’s a flourless crust that, believe it or not, is just as delicious as standard pizza dough. For this recipe, you only need to replace the regular pizza dough with a crust made from cauliflower. 1 cauliflower head 2 eggs 2 tablespoons grated Parmesan cheese 2 tablespoons grated mozzarella cheese A pinch of salt, a little pepper 1 teaspoon turmeric 1 teaspoon olive oil For the topping: 3 tablespoons olive oil 50g tomato sauce 100g cheddar cheese 200g mozzarella 2 tomatoes
Preparation: First, divide the cauliflower into smaller pieces and put them in a blender. Blend until you get a creamy mixture. Then put it in a pot and cook until it softens. When cooled, wrap the mixture in a clean cloth or gauze, and then squeeze out the excess water with your hands. The mixture should be well drained because that way the dough won’t be sticky after baking. Mix the drained cauliflower with the eggs, spices, and other ingredients for the dough. Spread the obtained dough on a baking tray lined with baking paper.
Brush the mixture with olive oil and bake for 12 to 15 minutes at 220°C, or until the crust becomes crispy. On the crust, add tomato sauce, cheddar cheese, mozzarella, tomatoes, and a little more olive oil. Bake until the cheddar cheese melts and the tomatoes soften about 10 minutes.
